3 Step Vegan Cheesecake!

Sweets are always my go to so today I am sharing one of favorite recipes...

Vegan Blueberry Lime Cashewcream cake

Yes I know many people get weirded out by "vegan" alternatives but I can assure you even my key lime pie loving man likes this dessert!

I first made this for a 4th of July party, it worked out great but unfortunately there was none left to take home! Instead of the dairy in regular cheesecakes I use cashews to make it creamy. The nuts in the cake make it so filling I don't even need to go up for seconds. I make vegan desserts because I personally know my body cannot handle dairy but there are studies linking ailments to the hormones/toxins found in animal products to be aware of, try this vegan cheesecake to limit your consumption!

Step 1:

Night Before Prep

Soak 3 cups of cashews over night

(or at least 8 hours)

Step 2:

Crust

In a food processor or dry blender combine the following

- 1/2 cup almonds

- 3/4 cup walnuts

- 1 cup of dates

-1/2 tsp. of vanilla extract

- splash of water to blend into desired texture (not too crumbly)

Press the mix into the cheesecake pan, you want it to be sticky and less crumbly so it doesn't fall apart

Step 3:

Cheesecake layers

Drain and rinse the cashews

Blend in food processor until creamy (may need the coconut oil to become creamy)

-1/2 cup to 1 cup of melted coconut oil

-1/4 cup lime juice

-1/4 cup or less of sweeter, maple syrup or honey

Taste to see if it is sweet enough

Spread about 1/3 of it on top of the crust

Place in the Freezer for 30 minutes

Blueberry Layer

- Add 1 cup of blueberries to the remaining cashews in the food processor, blend

Spread the layer on top of the first

add fresh blueberries around the cake, maybe even some strawberries to get the red white and blue in there!

Cover with foil freeze for 3 hours

Then place in the fridge for a couple of hours

Serve and enjoy!

Its important to remember each time is an experiment you may like it in different ratios. My first try I did too much crust, second time was perfect, third time was not enough crust and too much creamy goodness. I hope you like this thanks for reading. Happy healthy and holistic
