Summer sharing salad


Its Summer time and the livins easy. Great weather, fresh fruits and vegetables, now an abundance of get togethers. From cook outs to beach parties I always like to bring dishes, helping the host and guarantees I can eat something healthy.

My go to this summer has been a quinoa based dish.

- 1 cup quinoa cooked

-3 cups leafy greens

(spinach, kale, swiss chard, whatever you got)

-1/2 cup walnuts

- sprinkle of pumpkin seeds

-1 chopped granny smith apple

-1 cucumber diced

- 1/2 to a whole lime juiced

- balsamic dressing

(store bought or make your own)

- optional avocado for those avocado lovers out there

Toss and enjoy! Great for meal preps too
