Cranberry Orange Muffins

I love baking, being vegan, trying to avoid sugar and gluten can’t stop me! So here is a great recipe I found that has all healthy ingredients.

Cranberry Orange Pecan Muffins

Soak ½ cup of dates in hot water

Preheat oven to 350 F

Process:

3 small bananas or 2 large bananas

Slices of 1 orange

Blend until smooth

Add in:

1 can of pumpkin puree (15 oz)

2 tablespoons flax seeds

1 tablespoon pumpkin pie spice

1 tablespoon vanilla extract

Drain dates and add them into the food processor until smooth

Transfer everything to a bowl

Add in 1 cup of fresh cranberries, or more if you love them!

Followed by 3 cups of gluten free oats

Transfer to Muffin tins, these muffins to do not rise so fill the cups up!

Add some chopped nuts to the top (I used pecans)

Place in the oven for 30-35 minutes

Let cool and enjoy these gluten free vegan muffins!
