Safe Snacking Recipes
Being a busy college student I spend my day running from class to class and in need of a quick food fix. Granola bars and energy bites are my go to! Yet the wrapping and packaging the snack leaves behind are concerning to me as I try to reduce the waste I produce (never mind the sugars and preservatives). Making your own bars and bites are super easy and a great way to improve your health as well as the environments!
Here are a few of my recipes!

(This is what my Dad refers to as my bird food diet)
Granola Bars
1 1/2 cup of gluten free oats
1/2 cup chopped nuts ( I used pecans)
Roast 350 degrees F for about 15 minutes
Add to a bowl with your add ins (seeds, dried fruit, supplements)
I used flax seeds, chia seeds, hemp seeds, bee pollen, coconut shreds and some matcha powder
Process 1 cup of dates
Add dates to dry mixture
Melt 1/4 cup of nut butter with 1/4 cup maple syrup
Pour over the other ingredients
Mix well
Place in a baking dish, even out, cover, and put in the fridge to firm up before cutting
Makes 8 large bars or 16 mini ones :)
Chocolate Energy Balls
Soak 1 1/2 cups of dates in warm water and let sit
3/4 cup of almonds
1/4 cup of walnuts
Pulse in the food processor
Add in the drained dates
Add 1/4 cup of cacao powder
1 tablespoon of coconut oil
And a tiny bit of water to make the mixture paste like
Roll Into balls and coat with whatever toppings you have
I used chia seeds, sunflower seeds, hemp seeds and cacao nibs
